This is a simple stir-fry and one which is open to interpretation, do not feel bound to follow it to the letter, change it as you see fit, more or less chilli, or more Thai influenced with some chopped garlic, lemongrass, a slug of fish sauce and a handful of Thai Basil.


Stir-Fried Chilli Squid with Noodles

Do all of the prep- work first, stir-frying is a fast process and one that does not wait for the cook to chop or slice extra ingredients. Remember this is a general guide, experiment with flavours and quantities, cooking times will vary according to the power of one’s cooking apparatus but remember to get the wok hot first and try to maintain that heat level throughout.

Ingredients - Serves Four

150g (5oz) Cooked Noodles
500g (1lb) Squid - Calamari cut into thin strips
2 tbsp Vegetable or Nut Oil
1 tbsp Diced Fresh Ginger
2 Onions cut into Slivers
1-2 Fresh Cayenne Chillies Sliced
2 Spring Onions Finely Sliced
2 tbsp Chopped Fresh Coriander
2 tsp Malay Curry Powder
3 tbsp Soy Sauce

How to Cook

Heat oil in wok, stir-fry onion and ginger for 2 minutes; add chilli and curry powder, fry for one minute. Add squid and spring onion, season with salt and pepper, stir-fry for a further minute. Add noodles and soy sauce, heat through, add coriander, check seasoning and serve with fresh lemon or lime.
