La Kama is a fabulous spice blend, I like to think of it as a Moroccan garam masala, aromatic rather than chilli hot it is usually a blend of five spices; cinnamon, peppercorns, turmeric, ginger and nutmeg.

La Kama Spice Mix

Particularly effective in tagines and lamb dishes it can also be used to rub into poultry and fish dishes or as a base to a curry like sauce. If you are fortunate enough to come across some scallops then these react wonderfully well to a light dusting of La Kama just before cooking.

La Kama Recipe

1 tbsp ground cinnamon or small stick roasted and ground
1 small tbsp roasted and ground black peppercorns
tsp freshly ground nutmeg
2 tsp ground ginger
2 tsp ground turmeric

Mix all together and store in an airtight container.
