Miles Collins is Head Chef of Branston Hall Country House Hotel in Lincoln, England.
His career began in the mid eighties with work experience in Swiss restaurants before a four- year apprenticeship with Crest Hotels. In 1992 he fulfilled a long held ambition to work in Germany as Chef de Partie in one of Baden Würtemberg’s leading hotels. Returning to England Miles spent four years working in the Lake District where he competed in several national and international salon culinaires.
After two positions as Head Chef Miles came back to his native Lincolnshire in 1997 at Branston Hall. Having gained dining awards from the AA and RAC Branston Hall continues to offer eclectic menus drawing inspiration from across the globe.
